Have you ever noticed enoki mushrooms in the grocery store that are slender and white? They grow in the wild as well, but are a distinct color and shape. Commercially cultivated enoki are kept white by not being exposed to light. Enoki in the wild develop viscid orange crowns and a brown stem, and are, in my opinion, far more attractive than store-bought variants.
Although some people may not realize it because these mushrooms grow all summer, they are the first mushrooms I notice each year, even before morels. If the ground is appropriate, they will come up through the snow in some spots; somehow,
they seem to be able to melt the snow around them enough to poke out and defrost portions of ground. I’ve heard they can also withstand freezing and will continue to release spores afterward.
Of course, you can eat them, but they have a flavor that is only ok and resembles a number of really toxic mushrooms. I don’t choose them for the table very often.
HABITAT OF ENKOTI MUSHROOMS
During spring thaws and throughout the summer, these grow directly on dead wood. They prefer hardwoods and dead willow trees.

These cook quickly; if you want them hot, just fry until they wilt (about 30 seconds), then drain on paper towels and season with a pinch of salt to taste; the flavor is light and pleasant.

Wild Enoki Mushrooms
